How to make jam of clementines

What do you do when there are “too much” clementines on the trees? Indeed, you make jam! So here’s the recipe:
 
Ingredients:
1 kg of clementines
1/2 kg sugar
1 cinnamon stick
1 lemon juice
 
Instructions:
Peel and wash the clementines very thorough. Cut to pieces and take out the seeds. Put in a pan and add the sugar. Cook the clementines on medium heat for about 20 minutes and stir now and then. Add the cinnamon stick and lower the heat. Cook the clementines on low heat for another 2.5 hours (very important to stir every now and then!) until the fluids disappear. Add the lemon juice to the pan and let it cook for another 5 minutes. Let it cool off on room temperature and your jam is ready! Pass it on to a glass bowl and keep it in the fridge.
